MINI MEATLOAF & CAULIFLOWER MASH FOR KETO

This mini meatloaf makes a great weeknight dinner idea! Serve with cauliflower mash and add your favorite green veggie and you’ve got some lightened-up comfort food right in your kitchen. 

 Keto meatloaf and cauliflower mash

 

INGREDIENTS

(2 Servings)

8 oz of Ground Beef

2 Eggs

1 Cup of Diced Green Pepper

1 tsp of Onion Powder

1 tsp of Garlic Powder

1/2 tsp of Salt

Pinch of Pepper

1 Tbsp of  Coconut Oil

1 Head of Cauliflower

2 Tbsp of Butter

 

DIRECTIONS

  1. Preheat the oven to 350F/175C.
  2. Start by chopping the green pepper into very small cubes.
  3. Combine the meat, eggs, green pepper and spices into a bowl and mix well. Divide the meat mixture into a greased muffin tin. Bake in the oven for 18 minutes.
  4. Meanwhile steam the cauliflower until soft and then add to a blender with butter, salt and pepper to create the cauliflower mash.
